If you’re going for that then here is my Dark Soul 3 sorcerer build that I used to at the beginning of the game.
For someone new, a knight might be the best way to start but those who like spells and fighting from a distance then a sorcerer type character would suit better. Dark Soul 3 is great at giving you many choices if types of characters.
